This week I had to make lots of cakes, which was great, as I love making cakes. Really love it.
My Mum asked me to make a cake as a surprise for her “Nitter Natter” group in Dungarvan. I made some sugarpaste wool and knitting to go on the lemon buttercream filled sponge.
I used two types of coloured sugarpaste, and borrowed some of my daughters knitting needles, with a note on the cake that they were not edible!
Then we had our final of the Waterford Riding Club Spring Show Jumping League in Ballinamona. The last night is traditionally prize giving and we normally throw a bit of a “do”.
I made 2 loaves of sandwiches, one brown, one white, with a mix of cheese, ham, cucumber and salad.
Then I made a tray of vanilla sponge cupcakes, and decorated them with coffee buttercream and espresso meringues, and a garnish of chocolate.
For my sister in laws birthday on Friday night, I made an Ombré cake. It looks so dramatic, and tastes really great, the sponge was filled with vanilla and raspberry cream, and the icing; raspberry and rose. Pam Black had demo’d it on the Cake Course in Ballymaloe, and I was only DYING to try it. I need to have better definition between the colours though I think.
Then finally, Sunday was the Leinster Orienteering Championships, and there was a cake sale in aid of the Junior Squad. I was chatting to a fellow Ballymaloe student when deciding what to make from the cast array of recipes we had received for biscuits and traybakes. These were Kaelin’s recommedations, and I was delighted with how well they worked out. So, I made blueberry and cinnamon sugar squares,
Caramelised almond squares,
Raspberry and Coconut Squares
and finally some chocolate chip cookies.
