Because of my small* hobby of collecting cookbooks, every now and then I find a gem. Any any cookbook with a delectable Chocolate Sundae in it is a winner with me.
I found the author quite by accident on Instagram. Christine Lane is a complete genius.
As we try to cut down on sugar in our day to day lives, I am consistently looking for ways to still bake and more importantly eat the things I enjoy. And also try to adhere to the wishes of those around me. Who also love to eat, but wish to eat less!
This book, although primarily for the American market, has some really unique ideas and recipes. The recipes, as the book says, aims to produce sweet treats for two. And it does. Better still it doesn’t require any specialist equipment or tools. making it ready to use and enjoy straight away.
The question was;
Why to try first?? So many pictures good enough to lick. I’m afraid I bypassed the pie section to try at a later stage, primarily because I’m not very well practised in the art of american pie! We had a family meeting. (well kind of, Jordan and I decided in other words…..) and decided on the Sundae. With my chocolate sauce.
Jeni’s Hot Fudge Sauce Recipe:
125g dark chocolate, finely chopped
pinch of salt
250ml double cream
1 teaspoon vanilla extract
Put the cream into heavy saucepan. Heat very gently.
Once the cream has JUST reached boiling point, stir in the butter, chocolate, salt, sugar and the vanilla extract.
Stir until combined and leave to cool to thicken slightly.
Even though the hot fudge sauce makes more than even I would need for this dish…. it does keep well in a sealed container in the fridge, just in case you need a spoonful of sugar mid week.
